I've made a new Nix function 'isacosy-theory' which takes the template
we made, an argument to fill in for each (which we assume is a file,
e.g. from another derivation) and does the substitutions for us.

We still don't have the actual data, but at least the horrible business
of plugging it in will now be reasonably easy and safe.
